The Best Cinnamon Sugar Banana Muffins… No seriously these are the best!!!

This recipe is great for either mini muffins or regular size muffins. Whatever size muffin your household prefers. They never last long in our household.

These are a big hit with my boys that I like to double this or even sometimes triple the recipe and freeze a good batch of them. Thawing them out make them taste just as good!

Stock up on some bananas and let’s make these!

The Best Cinnamon Sugar Banana Muffins

Ingredients
  

Muffins

  • 2/3 cup sugar
  • 1/2 cup light sour cream
  • 2 eggs
  • 2 bananas – smashed up
  • 1 tsp vanilla extract
  • 1 2/3 cup all – purpose flour
  • 1 tsp baking soda
  • 1 TBSP ground cinnamon
  • 1/2 tsp salt

Cinnamon & Sugar Topping

  • 3 TBSP melted Butter
  • 1/4 cup sugar
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 375 degrees F. Spray 12 muffin cup tin or out in paper liners. You can also use mini muffin tins.
  • In a medium bowl combine the sugar, sour cream, and eggs. Stir with a whisk.
  • Add in mashed up bananas and vanilla extract. Mmix.
  • Add in flour, baking soda, cinnamon and salt. Stir this together with a spatula.
  • Add mixture to muffin pan. Either mini muffin pan or regular.
  • Put in the oven at 375 degrees F for 20 minutes.
  • While the muffins are baking – make the topping mixture.
  • Combine the sugar and cinnamon in one small bowl and the melted butter in another.
  • When the muffins are done baking take out right away and start dipping each muffin into the melted butter first and sugar mixture after.
  • Keep repeating with all the muffins till they are done.
  • Enjoy!

Notes

Great to double the recipe and freeze a batch for later!

Heat a tablespoon of butter and a tablespoon of olive oil in a large pan. Wait until the pan is hot and the butter has fully melted.
