Healthy Buffalo Chicken Stuffed Potatoes – Weight Watchers 3 points

I made these healthier by adding fat free ranch dressing and no creams. Still full of flavor with the hot sauce and ranch dressing.
If you follow weight watchers the only points come from the mozzarella cheese.
I am training for a half marathon right now- the flying pig. Carbs – especially healthy carbs like these baked potatoes are great fuel for my runs. Baked potatoes plain are good carbs. It is when you add all the add ons to it that make it unhealthy. I stuffed them with healthy protein and no creams to keep this meal healthy.
The first thing you want to do it bake your 4 potatoes at 425 degrees for 55 mins. Make sure to use a fork and place little holes in them with it throughout the potatoes.
Use a rotisserie chicken or cook the chicken. Place the chicken and add ons in a bowl while the potatoes are baking and set aside. Put together the stuffed potatoes top with more cheese, sauce and green onions and put back in the oven for 10 minutes. Take out and enjoy.

Healthy Stuffed Buffalo Chicken Baked Potatoes
Ingredients
- 4 russet potatoes
- 1 rotisserie chicken – shredded
- 2 TBSP Fat Free Ranch Dressing
- 2 TBSP Franks Hot Sauce
- 1 cup Mozzarella Cheese – divided
- 6 green onions – chopped up
Instructions
- Gather your 4 Russet Potatoes and use a fork and pierce them to create tiny little holes in each one of them.
- Place potatoes in the oven at 425 degrees and bake for 55 mins.
- Shred your Rotisserie Chicken and place in large bowl.
- Add in the ranch dressing, hot sauce, and 1/2 cup mozzarella cheese to the chicken and mix all together.
- When potatoes are finished baking take out and cut in half. Scoop each one out a little bit to make room for filling.
- Fill each potato with the chicken filling. Top with the rest of the cheese. Top with the chopped green onions and little bit more hot sauce.
- Put back in the oven at 425 degrees F for 10 more mins. Take out and enjoy!
