Healthy Stuffed Buffalo Chicken Baked Potatoes

Ingredients
  

  • 4 russet potatoes
  • 1 rotisserie chicken - shredded
  • 2 TBSP Fat Free Ranch Dressing
  • 2 TBSP Franks Hot Sauce
  • 1 cup Mozzarella Cheese - divided
  • 6 green onions - chopped up

Instructions
 

  • Gather your 4 Russet Potatoes and use a fork and pierce them to create tiny little holes in each one of them.
  • Place potatoes in the oven at 425 degrees and bake for 55 mins.
  • Shred your Rotisserie Chicken and place in large bowl.
  • Add in the ranch dressing, hot sauce, and 1/2 cup mozzarella cheese to the chicken and mix all together.
  • When potatoes are finished baking take out and cut in half. Scoop each one out a little bit to make room for filling.
  • Fill each potato with the chicken filling. Top with the rest of the cheese. Top with the chopped green onions and little bit more hot sauce.
  • Put back in the oven at 425 degrees F for 10 more mins. Take out and enjoy!
