Strawberry Rhubarb Pie

This delicious summer pie was made with fresh ingredients right out of my garden! The best time to make this is June. The fresh ingredients really made this pie mouth watering. 

My oldest son Evan – age 10 was a huge fan of this pie. 

Both my sons helped me with planting the rhubarb and strawberries in the garden and caring for them. Eating the pie was more rewarding and enjoyable because of that I am sure.

This is the perfect summer dessert! It will be a hit every time you make this. 

Strawberry Rhubarb Pie

The sweet and tart combination of both strawberries and Rhubarb make this amazing!

Ingredients
  

  • 2 pre – made pie crusts
  • 3 cups sliced rhubarb ( 1/2 inch pieces)
  • 2 1/2 cups chopped strawberries
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 2 TBSP orange juice
  • 1 tsp pure vanilla extract
  • 2 TBSP unsalted butter- cut into small pieces
  • 1 large egg white to brush the top

Instructions
 

  • Preheat oven to 400 degrees F
    Make Pie Mixture. Cut up Rhubarb and strawberries and add in everything else. Stir up and pour into pie crust in a 9 inch pie pan.
    Cut up other crust into layers 1/2 inch. Weave the pie crust on top of the pie mixture.
    Brush the egg wash on top of the pie. Sprinkle a little sugar on top of it.
    Put in oven at 400 degrees F for 10 minutes. Turn down to 350 degrees F and cook for another 40 minutes. Cover edges with aluminum foil or pie cover towards the end of cooking it.
    Take out and let cook for at-least 3 hrs room temp or put in the fridge to let form before serving.

Heat a tablespoon of butter and a tablespoon of olive oil in a large pan. Wait until the pan is hot and the butter has fully melted.
