Twice Baked Sweet Potatoes

The perfect Thanksgiving dish! Something different from a casserole. Perfect combination of sweet and creamy with a crispy outside layer.

Do not not be intimated by the time it takes to make this. The majority of the time is just waiting on the sweet potatoes to bake. After that it is quick and easy to assemble.

They will be a huge hit at the thanksgiving dinner.

Here is how you make them:

Twice Baked Sweet Potatoes

Ingredients
  

  • 4 medium sweet potatoes
  • 4 TBSP unsalted butter
  • 3 TBSP brown sugar
  • 2 tsp cinnamon
  • Splash of milk

Topping

  • 3/4 cup cut up pecans
  • 2 TBSP brown sugar
  • 2 tsp cinnamon
  • 1 TBSP milk
  • 4 TBSP unsalted butter

Instructions
 

  • Preheat the oven to 375 degrees F. Pierce the sweet potatoes several times with a fork and place them on a baking sweet. Bake for about an hour or until tender.
  • While the potatoes are cooking making the topping.
  • Topping: Add the butter on a skillet and the pecans. Cook a medium high. Add in the brown sugar and cinnamon and stir. Add in the milk at the add. Keep stirring and cooking for about 5-7 mins. Place to the side till ready to top.
  • After nice and tender. Cut the potatoes in half. Scoop out the middle and out in mixing bowl and leave a thin layer to maintain the skins structure.
  • Prepare the filling. Add in the brown sugar and cinnamon to sweet potatoes middle. Start mashing it together. Add a little bit of milk to make it nice and smooth at the end.
  • Spoon the mixture back in each sweet potato skin.
  • Add the pecan topping to each one.
  • Final Bake. Return the sweet potatoes back to the oven to bake at 375 degrees F for 15- 20 minutes.
  • Take out and Enjoy!

Notes

Add Mini Marshmallows to the toppings if you want. Another great topping
